Today’s breakfast Yeriappa, but made it like pancakes, a sumptuous South Indian recipe which can be prepared quickly. This delightful deep fried sweet delicacy is generally made as naivedyam and is served in the temples as prasadam.
Ingredients:
· Rice – 2 cups
· Fenugreek seeds – ¼ tsp
· Grated Coconut – 1 cup
· Thin Poha – 1 cup
· Jaggery – ¾ cup
· Cardamom pods – 3-4
· Salt – ¼ tsp
· Water – to adjust the consistency
· Oil/ Ghee for shallow frying
Method:
· Wash the rice and fenugreek seeds thoroughly, soak it for 4 hours or overnight.
· Take a mixer jar add the strained rice, grated coconut, poha, jaggery, cardamom pods, salt and very little water.
· This batter requires no fermentation. Adjust the consistency of the batter if required, do not make it very thin. It will absorb too much of oil.
· Make it on a pan like pancakes, drizzle oil from the sides and over it with a lid while cooking it OR you can deep fry it.

Method for deep frying:
· Heat oil in a kadai. Let it boil.
· Now pour spoonful of batter in the oil. Keep the flame on medium heat.
· After some time, it will puff up. Slowly turn and cook it on the other side too.
· Once it turns golden brown in colour take it out.
· Make more yeriappa's in the same way.
