Usually Kulcha is made from refined flour, but here I have used wheat flour for this preparation. Have served this with Chole.
I have avoided butter or ghee, you can apply to make the kulcha more yummmm.
Ingredients:
· Wheat flour -1.5 cups
· Baking soda – ½ tsp
· Baking powder – ¾ tsp
· Salt – ½ tsp
· Curd - 4 tbsp
· Water – ¼ cup or less
· Oil – 1 tbsp
· Nigella seeds / Black sesame seeds as required
· Chopped coriander leaves as required
· Butter/ Ghee as required
Method:
· Combine all the ingredients and prepare a dough.
· Knead it well, cover it with a damp cloth and allow it to rest for 2-3 hours.
· Now make balls and roll it slightly thicker, spread little seeds and coriander leaves and lightly roll it again.
· Heat a tava, now apply some water on the other side of the rolled kulcha and place it on the tava. Sprinkle little water on the hot tava and cover it with a lid.
· This will help the kulcha to cook faster.
· Once it fluffs up, flip it and cook on the other side too.
· Flip it again.
· You may apply butter/ ghee and serve it hot with Chole or any other North Indian recipes.
