VEGETABLE CUTLET

Cutlet recipe is a popular snack in Indian cuisine and there are so many different ways to make them. Vegetable Cutlet also called as veg cutlet are crisp, savory, tender patties made with a mix of healthy veggies, savory spices, fresh herbs and crispy breadcrumbs. Mouth watering and delicious tea time snacks which can be enjoyed without guilt.


Ingredients:

· Oil - 1 tbsp

· Butter - 1 tbsp

· Chopped Green Chillies - 1 tbsp (finely chopped)

· Chopped Beans – 2 tbsp

· Chopped Carrot – ½ cup (chopped)

· Boiled Green Peas – ½ cup

· Ginger Chilli Paste – 1 tbsp

· Turmeric Powder – 1/8th tsp

· Kasturi Methi – 1 tsp

· Cumin Powder – ½ tsp

· Red Chilli Powder – ¼ tsp

· Black Pepper Powder – ¼ tsp

· Boiled Potatoes – 4 medium sized (grated)

· Garam Masala Powder – ¼ tsp

· Amchur Powder – ¼ tsp

· Beetroot – 1/4th cup

· Coriander Leaves – 2 tbsp (chopped)


For Slurry:

· Maida – ½ cup

· Cornflour – ¼ cup

· Salt – ½ tsp

· Water

Method:

· Take a kadhai add oil and butter. Now add the chopped green chillies, ginger chilli Paste and beans.

· Cook and sauté on high flame for 3-4 mins.

· Now add carrot, boiled green peas, turmeric powder, kasturi methi, cumin powder, red chilli powder and black pepper powder. Give a very good mix.

· Now add boiled (grated) potatoes, add garam masala powder, amchur powder and finely chopped beetroot. Give a very good mix. And finally add freshly Chopped coriander leaves. Mix it well.

· Let it cool down. Now you can start making the cutlets as per your choice. You can use a mould or hands to shape it.

· You can keep the shaped cutlets in the refrigerator for 10-12 mins.

· Now you can start preparing the slurry, take a bowl add maida, cornflour, salt and water to make a slurry with proper consistency.

· Now dip the refrigerated cutlets into the slurry and coat it with bread crumbs.

· You can either deep fry the cutlets or shallow fry it.

· I have shallow fried the cutlets and served it with ketchup and green chutney.
