Yes, it's Veg. Lasagna, richly rolled dish swimming in sumptuous tossed veggies, tomato sauce & creamy cheesy white sauce. This time tried to roll the sheets rather than layering.
Accompanied with Garlic bread.
Ingredients:
For cooking Lasagna sheets:
· Water
· Oil
· Salt
· Lasagna Sheets (have used store bought)
For stir fried veggies:
· Olive Oil – 1.5 tsp (any oil can be used)
· Garlic - 2 tbsp (chopped)
· Veggies:
Sweet Corn kernels (boiled)
Mushroom
Yellow Zucchini
Green Zucchini
Yellow bell pepper
Red bell pepper
Broccoli (blanched)
Spinach (blanched)
Salt
· Red Chilli flakes - 1 tsp
· Black pepper – ¼ tsp
· Oregano -1 tsp
For white sauce:
· Butter – 1 tbsp
· Oil – 1 tbsp
· Refined flour – 1.5 tbsp
· Milk – 350-400 ml
· Salt to taste
· Black pepper powder – ¼ tsp
· Oregano - ½ tsp
· Red chilli flakes – ½ tsp
· Nutmeg powder – ¼ tsp
· Processed Cheese - 50 gm
For red sauce:
· Oil - 2 tbsp
· Ginger – 1 inch (chopped)
· Garlic - 5-6 cloves (sliced)
· Onions - 1 medium size (chopped)
· Kashmiri red chilli powder - 1 tbsp
· Tomato puree - (blanch 4-5 tomatoes and make puree)
· Sugar – 1 tsp
· Tomato ketchup - 2 tbsp
· Oregano - 1 tsp
· Red chilli flakes - 1 tbsp
· Salt to taste
· Black pepper – ¼ tsp
Method:
For cooking Lasagna sheets:
• Take water in a utensil, let it boil, add salt and oil.
• Once it boils add the lasagna sheets and cook for about 8-10 mins or till it cooked.
• Strain the lasagna sheets and don’t overlap it. Keep it separately on a plate or clean cloth.
For stir fried veggies:
· Set a kadai on medium high heat, add olive oil, garlic and cook for 1-2 minutes.
· Now add all veggies and cook for 2-3 minutes on high heat.
· Add salt, chilli flakes, oregano, black pepper powder, toss and cook for 1-2 minutes, stir-fried veggies are ready.
For white sauce:
· Take a thick bottom pan and keep it on medium low heat
· Add butter and oil, let it melt, now add the flour and cook the flour for 2-3 minutes.
(Remember not to burn the flour or change the colour to brown, cook till it is light brown in colour)
· Now add milk in 2 batches and make sure to whisk well while adding milk to make a lump free sauce.
· Add salt to taste, black pepper powder, oregano, red chilli flakes and nutmeg powder, stir well.
· Now add processed cheese and give a good mix until the cheese melts. The white sauce is ready.
For red sauce:
· Set a pan on low heat, add oil, ginger, garlic and onions, cook until onions are translucent.
· Add Kashmiri red chilli powder and cook on low flame for few seconds.
· Now add the tomato purée and the remaining ingredients, stir well and cook on medium high heat, cover and cook for 12-15 minutes.
· Homemade red sauce is ready. In case, it turns very runny add little cornflour by mixing it in normal water.
For assembling:
· Spread little red sauce in a baking dish of your choice.
· Layer the lasagna sheets, further spread red sauce, stir-fried veggies, spread a layer of white sauce and grate some cheese, layer it with lasagna sheets, repeat the layering until you are done.
· Finally layer it with generous amount of mozzarella or processed cheese.
· Preheat the oven and bake for about 15-20 mins covered with foil.
· Last 10 mins remove the foil.
· Lasagna is ready, cut in square and serve with any bread of your choice.
