VEG BURMESE KHOW SUEY

If something can be called a bowl of happiness, this could well be it, that's perfect for a winter.

Khow Suey is a Burmese (from Burma) noodle dish with a delicately spiced coconut milk soup and is served up with an array of different contrasting condiments/toppings, each spoon full of soup you eat will be bursting with flavours! This is a one-pot meal which is made with the goodness of various exotic vegetables and boiled noodles. Khow Suey is probably the first thing that comes to mind when you think about Burmese cuisine, my family's all time favourite


Ingredients:

For Boiling Noodles

· Noodles - 1 packet

· Water

· Salt to taste

· Oil - 1 tsp

For soup

· Onion - 2 medium size

· Garlic - 7-8 cloves

· Ginger - 1 inch

· Green chillies - 2 nos.

· Coriander stems - 1 tbsp

· Oil - 1 tbsp

· Red chilli powder - 2 tsp

· Turmeric powder – 1.5 tsp

· Coriander powder 1 tsp

· Jeera powder 1 tsp

· Besan (gram flour) – 1 tbsp

· Baby Corn – 3-4

· Mushroom – ½ cup

· Broccoli – ½ cup

· Zucchini – ½ cup

· Sugar – ¼ tsp

· Salt to taste

· Coconut Milk – 350 ml

· Water

· Lemon

Method:

For Boiling Noodles

· Boil water in a wok, add salt and oil, add the noodles and boil for 5-6 minutes.

· Rinse the noodles with cold water or with tap running water.

· Pour few drops of oil and mix with noodles to avoid it from sticking to each other.


For Soup

· Take a mixer jar add onions, garlic, ginger, green chillies & coriander stems, add little water and grind into a fine paste.

· Take a wok add oil & add the onion grounded paste, stir well and cook for 3-4 minutes.

· Keep the flame on low & add the powdered spices, add little water so that the spices don’t burn and cook the spices until it releases its oil.

· Add besan and fry for 2-3 minutes

· Now add the vegetables & stir well, further add hot water, sugar & salt to taste.

· Keep stirring and bring to a boil, cook for 7-8 minutes on medium flame.

· Now, lower the flame and add coconut milk and stir well.

· You can increase the flame to medium heat & let the soup simmer for 7-8 minutes. Keep stirring at regular intervals.

· Add little lemon juice and turn off the flame.

· Khow Suey is ready and can be served hot with other components.

For Serving:

Ingredients:

· Boiled noodles

· Onions (sliced)

· Crushed Roasted Peanuts

· Hot soup

· Fresh coriander (chopped)

· Fresh spring onion greens (chopped)

· Fried noodles

· Fried garlic

· Fried onions

· Chilli oil

· Lemon wedges


Method:

· Place the boiled noodles in a bowl, pour the hot soup and top it with some roasted crushed peanuts, fresh onion slices, fried noodles, fried garlic, fried onions, freshly chopped coriander leaves and spring onion greens, chilli oil & a lemon wedge on the side to burst the flavour.

· Serve hot, you can tweak with the condiments and toppings as per your preference.
