VANGI BHATH

Vangi bhath is a healthy and tasty brinjal rice dish popularly made in the Karnataka and Maharashtrian cuisine. The ingredients and the spices that go into preparing them are different, so both the regional recipes taste different. I have made a south Indian version and have used MTR Vangi bhath masala to prepare this.


Ingredients:

· Oil – 3 tbsp

· Mustard seed – ¼ tsp

· Chana dal – ½ tsp

· Cashew nut - 1 tbsp

· Green chili - 1 slit

· Grated dry coconut – 2 tbsp

· Brinjal – 3 cups cut into pieces

· Turmeric powder - 1 pinch

· MTR vangi bhath powder – 4 tsp

· Tamarind juice – 3 tbsp (1 tamarind : 5 water)

· Jaggery – ½ tsp

· Salt

· Water – ¼ cup

· Cooked rice – 3 cups

· Coriander leaves

Method:

· Take a kadai, with oil in it. Now add mustard seed, chana dal, cashew nut, green chili and grated dry coconut.

· Sauté well and now add brinjal, turmeric powder. Give a good mix.

· Now add MTR vangi bhath powder, tamarind juice, jaggery and salt. Add water and mix well.

· Let it cook (cover it with a lid and cook until it is cooked properly).

· Add cooked rice, mix well and keep it on medium flame for 3-4 minutes.

· Finally garnish it with coriander leaves.

· Serve it with raita, curd, papad or pickle.
