MINI UTTAPAM

Uttapam is an authentic South Indian Breakfast recipe that is nutritious and healthy as it's topped with veggies and is prepared from rice and urad dal batter. A healthy breakfast to begin the day well.


Ingredients:

For Batter:

· Dosa rice - 2 cup

· Udid Dal – 1 cup

· Fenugreek seeds – 1 tsp

· Salt to taste

Vegetables for topping (Chopped)

· Onion

· Tomatoes

· Green chillies

· Curry Leaves

· Coriander Leaves

· Salt

Oil/ Ghee for making Uttapams

Method:

• Wash and soak rice, udid dal and fenugreek seeds together for 6 -7 hours.

• Late evening grind the above ingredients till it turns into a fine paste. Do not add too much of water. Let this mixture ferment overnight. Keep the batter little thick.

• Morning add salt to the fermented batter, give a good mix.

• Chop the vegetables and keep it aside in a bowl.

• Heat a pan of your choice.

• Pour one ladleful of this batter onto the pan and spread the chopped vegetables evenly. Drizzle oil or ghee from the sides of the uttapam.

• Now slowly flip the uttapam and again drizzle oil/ ghee from the sides.

• Flip it again and remove it from the tava once it is done.

• And serve this hot uttapam with sambar or coconut chutney of your choice.
