THAI GREEN PRAWN CURRY

Thai Green Prawn Curry is one of the most enjoyed dishes from the Thai cuisine. The spicy, aromatic and scrumptious Thai green prawn curry served with fragrant rice. Veggies, Prawns and spices cooked in the creaminess of coconut milk– a truly drool-worthy curry.

Ingredients:

For Green Thai Curry Paste:

· Oil - 1 tbsp

· Shallots – 4-5 or 1 medium onion

· Garlic - 8 - 9 cloves (roughly chopped)

· Galangal - 1 big pc (roughly chopped)

· Coriander seeds – 1.5 tbsp

· Cumin seeds (jeera) – 2 tsp

· Cloves – 2-3

· Pepper corns – ¼ tsp

· Lemon grass stalk - 1 (chopped)

· kaffir lime rind – ¼ tsp

· Kaffir leaves – 2-3

· Green chilies – 3-4

· Coriander leaves with stalk – handful

· Spring onion greens – ¼ cup

· Basil leaves – ¼ cup

· Vinegar – 1 tsp

· Salt - 1/2 tsp

· Water

For Prawns Green Thai Curry:

· Prawns – 12-15 pieces (big ones)

· Oil - 1 tbsp

· Broccoli florets – ½ cup

· Zucchini – ½ cup

· Red bell pepper – ½ cup

· Yellow bell pepper – ½ cup

· Mushroom - ½ cup

· Baby corn - ½ cup

· Brown sugar – ½ tsp

· White pepper powder a pinch

· Freshly made Green Thai curry paste

· Coconut milk - 400 ml

· Water 100 ml or more

· Salt to taste

· Fresh Basil leaves - 2-3 nos.

· Kaffir leaves – 2-3

· Lemon juice – 1 tbsp

For Flavoured Rice:

· Rice - 1 cup (soaked)

· Water - 2 cups

· Salt to taste

· Oil – 1 tsp

· Lemon grass stalk – 2 inches (chopped)

· Ginger - 1 tsp (sliced)

· Lemon Rind – ¼ tsp

· Kaffir lime leaves - 1

· Star anise (Chakri phool) - 1-2 nos.

Method:

For Green Thai Curry Paste:

· Dry roast the coriander seeds, cloves and peppercorns for a minute and grind them.

· To make the green curry paste, grind shallots, garlic, galangal, roasted coriander seeds, roasted cumin seeds, roasted pepper corns and cloves, lemon grass stalk, kaffir lime rind, kaffir leaves, green chilies, coriander leaves with stalk, spring onion greens, basil leaves, vinegar, salt and water to make a smooth paste. Later add oil as well. You can preserve this in freezer.


For Prawns Green Thai Curry:

· Set a pan on medium heat, add oil and add in 5-6 tsp. freshly prepared green paste and cook it for a minute or two. Once cooked push the paste on one side of the pan.

· Heat some oil in the free space of the pan and sauté veggies of your choice for 1-2 minutes and now add the prawns. Cover and cook for 2-3 mins.

· Add brown sugar and pepper powder, toss well, now add coconut milk, water and salt, mix well and continue to cook for 4-5 minutes on medium flame. Keep stirring.

· Add fresh basil leaves, Kaffir leaves and continue to cook until the curry is boiling, add lemon juice and turn off the flame

· Prawns Green Thai curry is ready to be served with flavored hot rice.


For Flavored Rice:

· Set water in a pan to boil, add soaked rice, salt, oil, lemon grass stalk, ginger, lemon rind, kaffir leaves and star anise.

· Cover and cook the rice for 7-8 minutes.

· Check whether rice is cooked and remove lemon grass stalk, star anise and ginger while serving.

· Rice is ready to be served with hot Red or Green Thai curry.
