Tender Coconut Ice Cream is super creamy and soft in texture, with a mild tropical flavor. It just melts in your mouth from the first bite. Due to the added creaminess of tender coconut meat, this ice-cream gets a luscious super creamy texture even without using eggs. Serve it in a coconut shell and relish the ice cream in its pure form. Ingredients:
· Tender coconut water – ½ cup
· Fresh cream - 1 cup
· Sugar granulated – ¼ cup
· Tender coconut meat - 1 cup + Little extra
· Condensed Milk – ½ cup
· Honey, for glazing (Optional)
Method:
· Take a mixer jar add tender coconut meat along with tender coconut water, blend to make a puree.
· Now add the full fat cream, sugar and the condensed milk into the same mixer jar and beat everything together until well combined.
· Chop the extra tender coconut into small chunks and mix it into the tender coconut ice cream.
· Transfer the mixture to a freezer safe bowl, level it on top. Cling wrap using a sheet.
· Freeze for 6 to 8 hours or overnight.
· Next day scoop and serve chilled!!
