TENDER COCONUT DOSA (Bannankaayi Dosa in Kannada)

Dosa is a popular south Indian breakfast recipe and there are wide varieties of dosas, one such variety is Tender coconut dosa, a traditional recipe from the coastal region of Karnataka. My grandmother used to prepare this delicacy. This nutritious and healthy dosa is a must-try when you get your hands on tender coconuts. This can be served with coconut chutney or jaggery syrup along with homemade ghee. This takes this dosa to another level when it comes to taste buds. Have served with coconut chutney recipe from my native Karwar learnt from my mother, this is made using bedgi mirchi, coriander seeds, curry leaves, hing, tamarind, salt, oil and the hero of this recipe freshly grated coconut 🥥.

Ingredients:

· Raw Dosa rice - 2 cups

· Fenugreek seeds – 1tbsp

· Tender coconut meat – 1 cup

· Thin (Patla) poha- ¾ cup (soaked)

· Tender coconut water as required

· Sugar – ½ tsp

· Salt to taste

· Oil/Ghee


Method:

· Wash the rice and fenugreek seeds thoroughly. Soak this for 4-5 hours.

· Add the washed and soaked rice and fenugreek seeds in a grinding jar with soaked thin poha and tender coconut meat. If the coconut meat is little hard, need to blend the tender coconut meat first, later add the soaked rice. As tender coconut needs to become smooth before adding the rice or else the pieces will remain.

· Grind the mixture into a fine and thick batter. Add tender coconut water while grinding if the batter is extremely thick. Preferably use tender coconut water.

· Transfer the batter to a bowl, stir well and adjust the batter consistency using tender coconut water. Remember not to make the batter very runny.

· Let this mixture ferment for 7-8 hours.

· Add little sugar and salt to the fermented batter, give a good mix.

· Heat a tawa of your choice and drizzle some oil/ ghee.

· Pour one ladleful of this batter onto the tawa and spread the batter uniformly, don’t make it very thin. Drizzle oil or ghee and cover it with a lid, and cook on low to medium flame.

· Once it is cooked remove the lid and flip the dosa, and remove it from the tava once it is done.

· Soft fluffy Tender coconut dosa is ready to be served with chutney or jaggery syrup along with ghee. And this time it’s powdered jaggery and homemade ghee.
