My favourite Sweet Appe for today's breakfast, cuisine from South India , but made it like Pancakes .
Made by soaking rice, little fenugreek seeds & while grinding added coconut & poha. Added little salt, jaggery & soaked peanuts (removed the skin) for extra crunch. We can add cashews too for more rich taste, but I like it with peanuts.
Ingredients:
· Idli/Dosa rice 1 cup
· Methi seeds 1 tsp
· Fresh Coconut 1/2 cup
· Jaggery 3/4 cup (adjust as per your preference)
· Thin Poha 3 tbsp
· Cardamom 3-4
· Peanuts/ cashewnuts – ½ cup (optional)
· Salt to taste
· Oil/Ghee to cook
Method:
· Soak rice and methi seeds for at least 5-6 hours or overnight.
· Blend the soaked rice, methi seeds with freshly grated coconut and poha.
· Don’t add too much of water and don’t make very fine paste.
· Now add jaggery, little salt and cardamom.
· Soak peanuts in water for at least 1 hour. You can peel the skin and chop it into small pieces. You can also replace this with cashew nuts.
· Add these peanuts to the batter and give it a good mix. This will give a nice crunch to appe. But it’s completely optional.
· Make it on a pan like pancakes, cover it with a lid while cooking it. OR
· Make sweet appe in appe pan using ghee or oil. Cover it with a lid while cooking it.
