Dosa one of the most popular south Indian breakfast recipe and there are wide varieties of dosas, one such is sugarcane dosa, a traditional recipe from Karnataka. This is sweet in flavor; the sweetness comes from sugar cane juice. This nutritious and healthy dosa is a must-try when you get fresh sugar cane juice. You will love this sweet, delicious dosa and its tiny size will attract the kids too. This can be served with coconut chutney or ghee.

Ingredients:
· Raw Dosa rice - 2 cups
· Fenugreek seeds – 1tbsp
· Thin (Patla) poha- ¾ cup
· Freshly grated coconut – ½ cup
· Sugar cane juice – as required
· Jaggery - as required
· Salt to taste
· Little turmeric powder (optional)
· Oil/Ghee
Method:
• Wash the rice and fenugreek seeds thoroughly.
• Now soak this in sugarcane juice for 4-6 hours.
• Add the washed and soaked rice in a grinding jar with rinsed thin poha and freshly grated coconut.
• Grind the mixture into a fine and thick batter. Add extra sugarcane juice while grinding if the batter is extremely thick. Use only sugarcane juice, do not use water.
• Transfer the batter to a bowl, add Jaggery, turmeric powder, stir well and adjust the batter consistency using sugar cane juice. Remember we need thick batter.
• Let this mixture ferment for 7-8 hours.
• Add salt to the fermented batter, give a good mix.
• Heat a tawa of your choice and drizzle some oil/ ghee.
• Pour one ladleful of this batter onto the tawa and do not spread the batter. Drizzle oil or ghee and cover it with a lid, and cook on low to medium flame.
• Once it is cooked remove the lid and flip the dosa, and remove it from the tava once it is done.
• If your tawa is big, you can make multiple small set dosas at a time.
• Sweet, soft fluffy dosa is ready to be served with chutney or ghee.
