SPANISH OMELETTE

Spanish omelette or Spanish tortilla is a traditional dish from Spain and is one of the signature dishes in the Spanish cuisine. It is an omelette made with eggs, potatoes and onions. This is a quick, delicious and perfect egg recipe to enjoy with your kids and family!


Ingredients:

· Olive Oil – 3 tbsp

· Onion – 1 big (finely chopped)

· Potatoes – 2 big (Chopped into thin slices)

· Eggs – 4

· Salt as per taste

· Chili flakes

· Black pepper powder

· Parsley Leaves/ Coriander Leaves ***I have added capsicum as well, but the original recipe does not require this ingredient.


Method:

· In a large frying pan or skillet, heat olive oil over medium-high heat. Add the thnly sliced potatoes and cook until it turns crisp.

· Once the potatoes are crisp, stir in the onions and cook until onions soften and begin to brown. Once done keep it aside.

· Meanwhile take a large mixing bowl, beat eggs together with salt, chili flakes, pepper and parsley or coriander leaves. Now add the cooked potatoes to the egg mixture and give a good mix.

· Immediately pour the mixture on the skillet or frying pan. Reduce heat to low, drizzle oil from the side and cover and cook. Cook until eggs begin to brown on the bottom.

· Loosen bottom of omelette with a spatula, invert a large plate over the pan, and carefully turn the omelette out onto it.

· Now slide the omelette back into the pan with the uncooked side down. Cook until eggs are set.

· Spanish omelette is ready to be served warm.
