SOYA HOT PAN / SIZZLING SOYA

A lip-smacking recipe, wherein the crispy soya chunks are tossed in sauces and served on a sizzling plate. A must try one which is scrumptious and super tempting. This can be served as a snack, as a starter or with Fried rice or Hakka noodles.


Ingredients:

For fried Soya:

· Soya chunks – 1 cup

· Corn starch - 1 tbsp

· Ginger garlic paste – ¾ tbsp

· Salt & pepper to taste

· Oil for frying



For hot pan sauce:

· Oil - 1 tbsp

· Garlic - 6-7 cloves (chopped)

· Ginger – ¾ tsp (chopped)

· Coloured bell peppers – 1 cup

· Ketchup - 2 tbsp

· Tomato chilli sauce/ Red chilli sauce - 1 tbsp

· Schezwan sauce – 2 -2.5 tbsp

· Salt & pepper to taste

· Corn starch - 1 tbsp (mixed in 2 tbsp water)

· Fried Soya chunks

· Spring onion bulbs – 2-3 tbsp

· Spring onion greens – 2-3 tbsp (chopped)


For base of the sizzling pan:

· Butter - 1 tbsp

· Cabbage - 1 cup (shredded)

· Onions - 1 medium size (sliced)



Methods:

For fried Soya:

· Heat water in a pan, add 3 cups water and salt. Once the water comes to a boil add the soya chunks.

· Boil it for 3-4 minutes. Turn off the flame.

· Now drain the water and rinse the soya chunks in cold water.

· Squeeze out the water from the soya chunks using both the hands.

· Now add the soya chunks in a mixing bowl, add corn starch, ginger garlic paste and salt & pepper to taste, mix and coat well.

· Set a pan on medium heat, add oil to deep fry the coated soya chunks until crisp and golden brown.


For hot pan sauce:

· Set a pan on medium heat, add butter, onions and cabbage and sauté them for 2-3 minutes. Keep this aside

· Take the same pan, keep it on high heat, add oil, garlic, ginger sauté them for a minute, add the coloured bell peppers and sauté that too for a minute.

· Add, ketchup, tomato chilli sauce/red chilli sauce, schezwan sauce, Salt & pepper to taste, mix and sauté for a minute, add a splash of water and cook for a minute.

· Now add the cornstarch and water mixture to the pan and cook until the sauce thickens.

· Add the fried soya chunks and toss well with the sauce, add some spring onion bulbs and greens. Give a good mix.

· Heat a sizzler pan until its smoking hot.

· Spread a layer of sautéed cabbage and onions on the sizzler plate, and spread the freshly prepared soya chunks with the sauce, garnish it with few chopped spring onion greens and its ready to be served, serve hot.


*** If you don’t have a sizzler pan, you may skip the step of using the sizzler pan and sautéed onion and cabbage. You can directly serve the freshly prepared stirred soya chunks.
