SICILIAN PIZZA

Sicilian Pizza to celebrate the New Year Eve.

Sicilian pizza is closer to focaccia than a traditional Neapolitan pie. The difference between Sicilian-style pizza and a pan-style option is the lack of a bordered crust. Your sauce goes right to the edge of the spongy bread, as do the ingredients that you choose to have on the pie.


Sicilian pizza is also known as sfincione.

Sfincione is an Italian word which means “thick sponge”.The reason for its name is the crust on this pizza, which features a spongy bread base.


Ingredients:

· All-purpose flour - 3 & ½ cups

· Lukewarm water - 1 & ½ cups

· Sugar - 1 tbsp

· Salt – ½ tbsp

· Active dry yeast – ½ tbsp + ½ tsp (make sure the granules are dissolved in water before adding the flour)

· ***If you are using instant yeast – use only ½ tbsp

To top the pizza dough:

· Pizza sauce and ketchup

· Thyme and Rosemary dry leaves

· Chilli flakes

· Freshly grated mozzarella cheese

· Cherry tomatoes

· chopped olives

· Jalapeñoes

· Olive oil for greasing the pizza pan and the top of the Sicilian pizza


Method:

· Take a bowl, pour in the lukewarm water, add in the salt, sugar and yeast.

· Stir until they dissolve in water.

· Now add the flour and combine then all together to form a dough.

· You can use the back side of the wooden spoon to mix them all together.

· Now cover the dough with a damp cloth or plastic film.

· Keep the pizza dough in a warm place for 45 minutes to rise.

· After the first proofing, degas the dough. And to give a little shape and strength to the dough, just stretch and fold the dough from four sides. Dip your fingers in water while doing so. Stretch the dough and fold it onto itself. Repeat this 2-3 times.

· Now transfer the dough to a well-greased baking pan roughly about 10*15 inch.

· Pour some olive oil on top the pan pizza dough. And try to flatten the dough as much as possible. The dough may rebound back.

· Leave the dough to rest for 12-15 minutes and then continue to shape and try to fill it into the entire rectangular pizza pan.

· For second proofing cover the pizza sheet pan with a plastic film and let the pizza dough sit and rise for 1 hour.

· After the final rising, make some dimples all over the Sicilian pizza dough just like how we do while making a focaccia.

· For making the pizza sauce I have used ready made sauce and added ketchup to it. Added thyme, rosemary and chilli flakes too.

· And then top the Pizza with pizza sauce, cheese and anything that you will love to top. I used some olives, jalapeño and cherry tomatoes to top my sheet pan pizza.

· Now our homemade sheet pan pizza is ready to go into the oven.

· Pre heat the oven.

· Now bake the pizza at 250-degree Celsius for around 18-20 minutes.

· Before the pizza cools down completely, place the pizza on a wire rack.

· Enjoy this Sicilian pizza when its warm.
