Shankarpala is a crispy and lightly sweetened snack prepared using basic pantry ingredients! A must to complete the Deepavali faral. This is a slightly sweeter version which is my mom's recipe. I like it this way.

Ingredients:
· All-purpose flour – 500 gm
· Fine Rava (semolina) – ½ cup
· Milk – ¾ cup
· Sugar powder – 100 gms. approx.
· Butter – 120 gms or ghee - 100 gms
· Salt – ½ tsp
· Water
· Oil for frying
Method:
· Soak rawa in milk for about 10 mins.
· Heat ghee or butter.
· Now add maida, sugar powder, salt and melted butter/ghee to the mixture.
· Rub the butter/ghee nicely to the flour mixture with your hands.
· Now start adding water and make a semi hard dough. Let it rest for 10 mins.
· Now take one ball from the dough, knead it well. And start rolling it.
· Don’t roll it very thin nor very thick. Use a karanji cutter and cut it into diamond shape.
· Using a flat spatula to separate the cut shankarpali and place them in a plate.
· Heat oil in a deep pan.
· Once the oil heats up, drop handful of shankarpali in hot oil and turn the flame to medium. Once they turn golden brown on both sides, take them out with a slotted spoon.
· Put it on a big strainer, this will help to get rid of the excess oil.
· Allow the shankarpali to completely cool. Once cooled, store in an airtight container.
