SHAKSHUKA

Shakshuka is an easy, healthy recipe and is so satisfying, you can serve it for breakfast, lunch, or dinner. Said to have originated in Tunisia, this is popular in many parts of North Africa and the Middle East. It’s a simple combination of simmering tomatoes, onions, garlic, spices and gently poached eggs.


Ingredients:


· Oil/ Olive oil - 1 tbsp

· Garlic – 2-3 cloves chopped

· Green Chili – 2 finely chopped

· Onions – 1 big (finely chopped)

· Red bell pepper – 1 medium (chopped)

· Tomato puree –3 tomatoes

· Turmeric powder – ¼ tsp.

· Red chili powder – 1.5 tsp

· Cumin powder – 1 tsp

· Mixed herbs – ½ tsp

· Sugar – ¼ tsp

· Salt

· Water

· Eggs - 4-5 nos.

· Black pepper powder

· Chili flakes

· Parsley/Coriander leaves for garnishing


Method:

· Firstly, blend tomatoes in a blender by removing the seeds.

· Take oil in a pan and add onion, bell pepper and minced garlic and green chili.

· Give a good mix for 4-5 minutes, now add the tomato puree.

· Cook till the raw smell of tomatoes goes away. Now add turmeric powder, chilli powder, cumin powder, mixed herbs, sugar and salt

· Allow it to cook for 3-4 minutes on a low flame

· Now break the eggs and place them carefully.

· Sprinkle pepper powder, chili flakes and salt on the eggs.

· Cover it with a lid and allow the eggs to cook.

· Add chopped parsley/ coriander leaves.
