SEVIYAN KHEER/ VERMICELLI KHEER

Seviyan Kheer or milk vermicelli is a delicious traditional Indian dessert. It is known by many names, Kheerni, Payasam, seviyan kheer. Each family has its own recipe of making this kheer. Some may add dry fruits, others just serve it plain. Some add saffron others just cardamom, so choice is yours. Mine is loaded with dry fruits and saffron strands. Made this on the occasion of Maghi Ganesh Jayanti.

Ingredients:
· Ghee - 2 tbsp
· Vermicelli - 1 Cup
· Raisins
· Dry Fruits - (Chopped cashewnuts, Pistachios, Almonds)
· Milk - 1 ltr
· Sugar - 1 Cup
· Cardamom Powder - 1 tsp
· Saffron strands
Method:
· In a pan heat some ghee. Add the vermicelli and roast it well till it slightly turns brown.
· Then add raisins and dry fruits. Fry it for some time. Mix everything well. Keep it aside.
· Take another utensil and keep the milk for boiling. Let the milk reduce a little, keep it on low flame.
· Now slowly add the roasted vermicelli and dry fruits to the milk. Keep the flame on low and stir continuously.
· Let the vermicelli get cooked in milk for 5-6 minutes, now add sugar and keep stirring. Bring it to a boil.
· Add cardamom powder and saffron strands.
· Serve it hot or cold. Garnish it with dry fruits before serving.
