SEMOLINA MUFFINS

Freshly baked Semolina muffins with a tinge of Lemon to share it with my Dear friends and family to celebrate Friendship Day.


Ingredients:

· Fine rava (Chirotti rava) -1 & ¼ cup

· Brown sugar – ¼ cup

· White sugar – ¼ cup (can increase the sugar level )

· Curd – ½ cup

· Eggs - 2

· Oil – ½ cup

· Lemon rind powdered - 1 tsp

· Lemon juice – of ½ lemon

· Essence - vanilla or lemon

· Baking powder – ½ tsp

· Baking soda – ¼ tsp

· Custard powder / Maida/ Corn flour - 2 tbsp

· Vinegar - 1 tsp

Method:

· Take a mixing bowl, seive rava, custard powder, baking powder, baking soda and keep it aside.

· In another mixing bowl beat eggs and sugar, till it is fluffy.

· Add curd and oil to the egg mixture and beat them for another few minutes.

· Add the lemon rind powder, essence and lemon juice.

· Now combine the dry mix. Incorporating well in to the wet mix. Do not over mix.

· Add the vinegar, and give a good mix.

· Grease a mould of your choice.

· Pre heat the oven for 10 mins and bake for 20-25 minutes at 180.

· If you don't get the top as brown as you want, turn on the grill mode and keep it for 3 to 4 minutes.

· Your semolina muffins is ready to be relished with family and friends.
