Sabudana vada is a popular crisp fried snack made with tapioca pearls (sago), roasted peanuts, boiled potatoes and Indian spices. Made during festivals as this is immensely popular as a fasting food.
Ingredients:
· Sabudana – 1 cup (sago)
· Potatoes – 3-4 big sized (boiled)
· Cumin seeds (Jeera) - 1 tbsp
· Green chillies - 1-2 nos. (chopped)
· Peanuts – ½ cup (roasted & crushed)
· Sugar – ¾ tbsp
· Lemon juice - 1 tbsp
· Coriander leaves – 2-3 tbsp (chopped)
· Curry leaves - 1 tbsp
· Salt to taste
· Oil for frying
Method:
· Wash the sabudana 3-4 times in running water and soak it in water for at least 2-3 hours.
· Drain the excess water.
· If you find the sabudana dry, stir it with spoon or fork and add 2-3 tbsp water.
· Take a mixing bowl and combine all the ingredients with soaked sabudana.
· Apply water on your palms, take a big spoonful of mixture and flatten it on your palm to shape the vadas.
· Heat the oil and fry the sabudana vada on medium high flame until crisp and golden brown in colour.
· Serve the vadas hot and crispy with sweetened curd, sauce or chutney of your choice.
