Red Amarnath stir-fry, each and every household must be having their unique way of preparing it. Sharing the recipe which is done at my 🏠, a simple stir fry with just few ingredients and finally garnished with grated coconut 🥥. In Kannada it is called Kempu Harvi soppu.
Have lovely childhood memories attached when it comes to this leafy veggie. I used to love to have it with milk rice and the rice used to get a beautiful pink colour.

Ingredients:
· Lal Math – 1 big bunch (Kempu Harive Soppu in kannada)
· Green chillies – 2-3
· Garlic – 7-8 (crushed)
· Salt
· Freshly grated Coconut – 1 tbsp
Method:
· Clean the leaves and wash it thoroughly in running water.
· Drain the water and chop the leaves.
· Take a utensil and cook the leaves by covering it with a lid. After 1-2 mins add green chillies and salt.
· Now add the crushed garlic, cover and cook.
· Finally garnish with freshly grated coconut
· Serve it hot with rice or gruel.
