Rabdi is a classic Indian dessert treat that’s rich, creamy, and perfectly sweet. where milk is simmered on low heat until it thickens and then often flavored with cardamom, saffron and nuts! This is also called rabri,, usually served with other Indian sweets.
Ingredients:
· Milk - 500 ml
· Sugar – 3 tbsp
· Saffron strands – ¼ tsp
· Cardamom powder – ½ tsp
For garnishing:
· Chopped cashew nut – 1 tbsp
· Chopped almond – 1 tbsp
· Chopped Pista – 1 tbsp
Method:
· Boil milk in a deep non-stick pan on medium high heat, stirring occasionally.
· Reduce heat and cook till half reduced, keep stirring at intervals.
· Add sugar, mix and cook for 2-3 minutes.
· Add cardamom powder, mix and cook till reduced to 1/4th of it.
· Turn off the flame and let it cool.
· Serve it chilled and top it with nuts. Can be served with any sweet of your choice.
