A healthy way to incorporate quinoa and oats in your diet. This dosa does not contain rice. It's made with lentils, quinoa and oats. This dosa is rich in protein, iron, fibre and doesn't need any fermentation, but you can ferment it as well. This is the best alternative, if you are in search of a different dosa rather than the traditional dosa which is made with rice and urad dal. I bet you won’t stop at just one. Serve it hot with your favorite chutney.

Ingredients:
Quinoa – 1 cup
Oats – ½ cup
Chana Dal – ¼ cup
Yellow Moong dal - ¼ cup
Urad dal – ½ cup
Masoor dal – ½ cup
Fenugreek seeds – 1 tsp
Salt to taste
Water, as required
Oil/ Ghee to make the dosas
Method:
Take a bowl add quinoa, oats, chana dal, yellow moong dal, urad dal, masoor dal, fenugreek seeds and rinse it well.
Soak in enough water for 4-5 hours.
Take a mixer jar and then grind it into a smooth paste. Add salt and give a good mix.
Let it rest for about an hour or you can ferment as well. Other option is to use it immediately.
Heat a pan of your choice. Pour one ladleful of this batter onto the pan and spread evenly.
Drizzle oil or ghee while the dosa is getting cooked.
Cook till the dosa turns crispy.
Serve this crispy and healthy dosa with the chutney of your choice.
