QUICK PANEER BHURJI

A quick and simple vegetarian recipe popular in the North of India, made with crumbled paneer (cottage cheese) and Indian spices. This delicacy that is packed with the right amount of flavor and spice, is perfect for any meal of the day!

Ingredients: · Oil – 1 tbsp · Butter – 1 tbsp · Jeera – 1 tsp

· Green chilies – 1-2 (finely chopped) · Onions – 2 medium sized (finely chopped)

· Ginger – 1 inch (finely chopped) · Tomatoes – 1 big sized (finely chopped) · Salt · Red chili powder – ½ tsp · Turmeric powder - ¼ tsp

· Coriander powder -½ tsp · Pav bhaji masala – 1 - 1 ½ tsp · Coriander leaves - handful · Paneer – 200-250 gms (crumbled)

Method: · Take a wok or kadai and set it on medium high heat, add oil and butter, add cumin seeds. · Sauté for a minute, add onions and cook until onions are translucent. · Now add the green chilies, ginger and chopped tomatoes, sauté for 3-4 minutes. · Add salt, red chili powder turmeric powder and pav bhaji masala, mix well and cook until tomatoes are lightly mushy. Add little hot water if required. · Now add the crumbled paneer, give a good mix and keep the flame to medium heat, you can keep it dry or a little moist. The choice is completely yours. · Garnish with freshly chopped coriander leaves and mix well. · Serve it hot with any Indian bread of your choice.
