PRAWN GOAN CALDINE CURRY

Goan Caldine or Caldinho is a mild and delicious, yellow seafood curry made with few spices and coconut milk extract. It’s usually made with fish, but we can make it with prawns as well as vegetables. Today I have prepared the Prawns Goan caldine curry to go with hot steamed rice and accompanied with fish fry (not in frame) and salad.


Ingredients:

For the curry paste:

· Freshly grated Coconut – 1 cup

· Green Chilies – 3-4

· Tamarind - 1 tbsp

· Coriander Seeds - 1 tbsp

· Cumin Seeds - 1 tsp

· Garlic Cloves – 4-5

· Ginger– 1 inch

· Black Peppercorns – ½ tsp

· Sugar – 2 pinches

· Turmeric Powder – ½ tsp

· Vinegar – 1 tbsp

· Water – 1 ½ to 2 cups approx.

For the curry:

· Prawns – 15-18

· Onion (sliced) – 1 medium

· Tomato (chopped) – medium

· Slit Green chilies – 1-2

· Salt

· Oil -1 tbsp

Method:

· Apply salt to the prawns sand keep aside for 15-20 minutes.

· Blend all the ingredients that is mentioned in the curry paste in a mixer jar by adding 1 cup of water to it.

· Sieve the ground paste through a strainer and extract all the coconut milk. This is the thick coconut milk extract.

· Grind again by adding 1 cup of water and extract the milk using a strainer, this forms the thin coconut milk. Keep them separately aside. You can do this same procedure third time as well.

· In a vessel/ earthern pot, add oil, add onions and fry till soft and translucent.

· Add the tomatoes and fry for 3-4 mins and now add the prawns. Cook it for 3-4 minutes and then add the thin coconut milk and bring it to a boil.

· Add the slit green chilies and salt. Mix it well.

· Now add the thick coconut and just bring it to a boil, keep stirring and turn off the flame immediately.


*** Once you add the thick coconut milk, turn off the gas immediately, once it just comes to a boil. (As the curry tends to curdle). Check for seasonings and adjust with salt if required. Serve hot with steamed rice.
