Pineapple kesari also known as pineapple sheera is a delicious sweet made with semolina, pineapple, sugar, ghee and nuts. This is a very popular dessert from Karnataka, it has a natural sweet fragrance of pineapple chunks along with nutty aroma of ghee and cardamom powder. A delicacy to be tried in your kitchen.
Ingredients:
· Rava/Semolina – 1 cup
· Pineapple – 1 cup (Chopped)
· Sugar – 1 cup
· Water – 2 ½ to 2 ¾ cups
· Ghee – ¼ cup
· Cashew nuts – 10-12 cut into halves
· Raisins – 2 tbsp
· Cardamom powder – ½ tsp
· Saffron strands
Method:
· Take a kadai with very little ghee in it, add cashew nuts and raisins, roast on low flame until they turn golden brown. keep it aside.
· Now add little more ghee and add the chopped pineapple pieces and sauté for 3-4 minutes. Remove it and keep it aside.
· In the same kadai add the ghee and add rava. Roast it well, till it turns aromatic.
· At the same time keep one pot with water, let it boil on medium low flame.
· Now add the chopped roasted nuts, raisins and sauteed pineapple pieces to the rava. Mix it well.
· Now pour the hot water over it, mix it once, add saffron strands and cover the kadai with a lid for 2-3 minutes.
· Now add sugar, give a good mix and again cover for few more minutes.
· Finally add the cardamom powder and mix it well.
· Pineapple sheera/ Kesari is ready to be served.
