Fried rice is the perfect preparation for mixing flavorful and nutritious ingredients to make a quick one-pan meal. So, here is a simple, quick & delicious lightly spiced fried rice made with fresh pineapple.
Ingredients:
· Long grain rice – 1 cup or cooked rice
· Oil or Olive oil – 2 tbsp
· Garlic - 1 tbsp (finely chopped)
· Ginger – 1 tsp (finely chopped)
· Spring Onions bulb – 3-4 (finely chopped)
· French beans – 8-10 (finely chopped)
· Carrot – 1 (finely chopped)
· Capsicum – 1 (chopped)
· Pineapple - ¾ cup (chopped)
· Black pepper powder – ½ tsp
· Soya sauce – 1 tsp
· Apple cider vinegar – 1 tsp
· Salt to taste
· Fresh spring onion greens (chopped)
Method:
· Wash and soak the rice for 10-15 minutes.
· Boil the water, add salt, little oil and add the drained rice in it. Let the rice get cooked.
· Once the rice is cooked, strain the rice and let it cool down.
· Set a wok on high heat, add oil and stir fry the pineapple pieces for 3-4 minutes. Keep the pineapple pieces aside.
· Now in the same wok add oil, garlic and ginger and cook for a minute or two till the garlic and ginger turns slightly brown.
· On high heat now add onions, stir fry for 1-2 minutes. And now add all the veggies and salt. Give a good mix.
· Add black pepper powder, soya sauce and sauteed pineapple pieces. Stir well.
· Add the cooked rice and give a good mix. Add vinegar and garnish with some freshly chopped spring greens and mix well.
· Pineapple Fried rice is ready to be served.
