Khichdi is a very humble dish which we see as a very soothing and basic recipe to cook. This Khichidi is made with a fusion of Dal Khichidi & Pav Bhaji coming together. Dal Khichdi with veggies & flavored with Pav Bhaji Masala.
Ingredients:
· Rice - ¾ cup
· Toor dal - ½ cup
· Water - 4.5 cups
· Salt to taste
· Ghee - 1 tbsp + oil 1 tsp
· Jeera - 1 tsp
· Onions - 1 medium size (sliced)
· Garlic paste - 1 tbsp
· Red chilli paste - 2 tbsp
· Cauliflower – ½ cup (boiled)
· Potatoes - 1 medium size (boiled)
· Green peas – ¼ cup
· Tomatoes - 1/3rd cup (chopped)
· Capsicum – 1/2 cup (chopped)
· Salt to taste
· Hing – ¼ tsp + water 1 tsp
· Pav bhaji masala powder - 2 tbsp
· Turmeric powder - ½ tsp
· Water as required
· Lemon juice - 1 tsp
· Fresh coriander - 1 tbsp (chopped)
· Garam masala a pinch
Method:
· Wash the rice and dal thoroughly, add it to cooker, add 4.5 cups water, salt to taste, stir once and pressure cook them for 3-4 whistles on medium low flame.
· Also, pressure cook potatoes and cauliflower. Cook the green peas outside, don’t put it in pressure cooker.
· Set a kadai on medium heat, add ghee and oil, jeera.
· Add onions and garlic paste and cook for 4-5 minutes, further add red chilli paste and cook for 2-3 minutes.
· Add the pressure-cooked potatoes and cauliflower, chopped capsicum, tomatoes and green peas.
· Now add salt, hing, pav bhaji masala and turmeric powder, mix well and cook for 3-4 minutes.
· Add the cooked khichdi to the veggie masala and mix well, add water as required to adjust the consistency of the khichdi.
· Cover and cook further for 4-5 minutes.
· Add lemon juice, freshly chopped coriander leaves and a pinch of garam masala. Stir and cook for few more minutes.
· Your pav bhaji khichdi is ready to be served, serve hot with a blob of butter and fresh creamy curd.
