Quick, easy and delicious Paneer Pulao for tonight's dinner ššServed with home made fritters and pickle šš This pulao is yummy and mildly spiced paneer rice dish made using basmati rice, onions, Indian spices, herbs and paneer (Indian cottage cheese). Make this easy paneer pulao for your weekend lunch or dinner.
Ingredients:
Ā· Paneer - 200 gms
Ā· Oil ā 1 tbsp for frying Paneer
Ā· Basmati rice - 1 cup
Ā· Oil - 2 tbsp
Ā· Ghee - 2 tsp
Ā· Bay leaf ā 1-2
Ā· Cardamom- 2-3
Ā· Cloves ā 4-5
Ā· Peppercorns ā 8-10
Ā· Cinnamon ā 1 inch
Ā· Cumin seeds ā Ā½ tsp
Ā· Onions - 2 (thinly sliced)
Ā· Green chilli ā 3-4 (slit)
Ā· Carrots - Ā½ cup
Ā· Beans - Ā½ cup
Ā· Peas - Ā½ cup
Ā· Garam masala - 1 tsp
Ā· Salt
Ā· Water - 2 cups
Ā· Mint leaves Coriander leaves (finely chopped)
Ā· Garnish with fresh coriander leaves
Method:
Ā· Wash and soak the basmati rice for about 25-30 minutes.
Ā· Take a pan add oil and fry the paneer pieces on medium flame till they are golden brown in colour. Keep it aside.
Ā· Heat apressure cooker add some oil and ghee, add the whole spices.
Ā· Now add the onions and green chilies and fry them till they are golden brown in color.
Ā· Now add the vegetables and sautĆ© them for 2-3 mins.
Ā· Add salt, garam masala powder, mint leaves and coriander leaves and sautĆ© them.
Ā· Add the fried paneer pieces and mix it well.
Ā· Now add the soaked basmati rice, add water and mix well.
Ā· Pressure cook for one whistle on medium flame.
Ā· Do not open the lid, let the Pulao rest for 10 mins.
Ā· Serve it hot with any raita of your choice.
