Palak tambli/ tambuli is a highly nutritional and healthy recipe from Karnataka. Tambuli, a type of yoghurt based curry can be prepared using a few spices and spinach leaves.
A very healthy and tasty dish that goes well with hot steamed rice and it's a comfort meal for summers, light on the stomach.

Ingredients:
For the coconut masala
Oil – 1 tsp
Cumin seeds (Jeera) – 1 tsp
Whole Black Pepper Corns – 4-5
Urad dal – 1 tsp
Green chillies – 1-2
Spinach Leaves (Palak) , roughly chopped - handful
Salt to taste
Coconut - 1 tbsp
Curd - ¼ cup
For the tempering
Oil/ Coconut Oil – 1 tsp
Mustard seeds – ½ tsp
Dry red chillies – 1 broken
Curry leaves – 1 sprig
Method:
· Heat oil in a pan, add urad dal, cumin seeds and pepper corns. Fry till it turns aromatic. Now add the green chillies and roughly chopped spinach leaves. Add little salt too.
· Sauté it for few minutes. Once wilted, turn off the heat and allow the spinach to cool.
· Now take a mixer jar add grated coconut and cooked cooled spinach. Add some water to make a smooth coconut masala, now add curd and churn for 10 seconds.
· Pour this in a bowl, add salt if required.
· For the tempering, heat oil in a tadka pan over medium heat; add the dried red chillies and mustard seeds, and allow it to crackle. Next add in the curry leaves, mix and turn off the flame.
· Pour this tempering on the palak tambuli, and serve it hot with steamed rice
