PALAK PANEER

Palak paneer is a delicious Indian dish, good on its own or served with rice or any Indian bread. This is a popular North Indian dish of Indian-style cottage cheese mixed with a rich and creamy spinach sauce that is infused with spices. There must be slight variations in the cooking style at many homes. Some may like to add the fried paneer cubes, I have not fried my paneer cubes in this recipe.



Ingredients:

· Spinach leaves – approx. 500 gms (1bunch)

· Green chilli chopped – 1- 2

· Oil – 1 tbsp

· Butter – 1 ½ tbsp

· Cumin seeds – 1 tsp

· Garlic – ¾ tbsp (chopped)

· Ginger– ¾ tbsp (paste)

· Onion – 1 medium (chopped)

· Cumin powder – ½ tsp

· Chilli powder – 1 tsp

· Paneer cubes – 200 gms

· Salt to taste

· Cream – 2-3 tbsp


Method:

· In a pan, heat water and add palak leaves. After a minute remove it from the water and add to ice cold water. This will help to retain the bright green colour of the palak/spinach leaves.

· In a mixer jar, add the blanched palak leaves, green chillies and very little water. Blend into a fine puree.

· Now take a pan, add some oil & butter. Add cumin seeds, chopped garlic and cook till the garlic turns slightly brown in colour.

· Now add ginger paste, chopped onion and sauté for 2-3 minutes. Cook until the onion turns slightly brown in colour.

· Now add the palak puree to this. Add salt, chilli powder, cumin powder and cook for 3-4 minutes.

· Add the paneer cubes and mix it gently. Cook for 3-4 mins.

· Turn off the flame and add some cream to this. Give a good mix.

· Palak paneer is ready to be served with any chapati or roti or fulka.
