MUMMY’S CAKE

Feeling nostalgic, childhood memories and those lovely days when my siblings and I used to enjoy this yummy bake made by mummy dear. We just named it as Mummy's cake and I have noted the recipe in my book too as Mummy's cake. Sharing my mummy's cake recipe today on this very special day to celebrate CHILDREN'S DAY. Have been eating this cake since my childhood, have special memories attached when it comes to this cake. This cake is baked in a traditional baking tin wherein the cake mould is kept on a ring that is filled with sand. And it is baked on the gas stove. Still remember the aroma of the bake, I used to and STILL enjoy having those lightly burnt bottom portion of the cake. Baked this today to relive my childhood memories with my mother and my family. It was an amazing day to bake this cake with my mother.

Ingredients:

Dry Ingredients

· Maida/All Purpose Flour – 250 gms

· Baking powder – 1 ½ tsp

Wet Ingredients

· Eggs – 3 big or 4 small

· Butter melted – 1 cup (100gms)

· Milk – ½ cup

· Powdered Sugar – 2 cups (200 gms)

· Vanilla essence – 1 tsp


Method:

· Keep all ingredients ready.

· Prepare a greased baking dish. Dust it with some flour.

· I have used a traditional baking tin wherein the cake mould is kept on a ring that is filled with sand. And it is baked on the gas stove. You can use any other method of baking cooker or oven too.

· Sieve and mix all dry ingredients in one bowl. Give it a gentle mix.

· Take another bowl, break the eggs and give a good whisk. Beat with an electric mixer until egg turns light and foamy.

· Now add the melted butter, milk, powdered sugar and give a good mix.

· Add vanilla essence and mix until well incorporated. Now, gradually add flour mixture that was kept aside.

· Now gently mix together both the wet and dry ingredients so that there are no lumps at all and you get at smooth batter.

· Don't over mix, we just need a lump free batter here.

· At this point you can directly start with your baking.

· Pour into your greased baking dish and bake it by the method you would prefer.

· Bake for around 35-40 mins or till a skewer comes out with a few moist crumbs.

· Turn off the flame and let the cake sit inside for few minutes.

· Demould the cake from the baking tin and cut into pieces and enjoy with your family and friends.
