Mint Rice or call it Pudina Rice, a fragrant, spicy and tasty one-pot dish made with mint leaves and some more spices. Green-colored mint rice with lovely flavors goes well with Boondi Raita, Salads, pickle and papads😊😊.
Ingredients:
For the ground mixture
· Garlic Cloves – 4-5
· Ginger - 1 inch
· Green Chillies – 3-4
· Coconut (grated) – ½ cup
· Coriander Leaves – 2-3 tbsp
· Mint Leaves - 1 cup
· Water
For the rice
· Oil/Ghee – 2 tbsp
· Hing – ¼ tsp
· Cinnamon stick - 1 Inch
· Pepper Corns - 5-6
· Cloves - 2
· Cumin Seeds - 1 tsp
· Cashew Nuts slightly fried - 2 tbsp (optional)
· Onion – 1 big sized (chopped)
· Potatoes – 2 medium (diced)
· Green Peas – ½ cup
· Salt
· Lemon – ½
· Sugar – ¼ tsp
· Rice - 2 cups cooked rice (you can use leftover rice too)
· Finely chopped coriander leaves
Method:
· Take a mixture jar add the ingredients that is mentioned for the ground mixture. Grind it using very little water into a semi fine paste. Keep this aside.
· Now take a big kadai add oil or ghee. Add hing, cinnamon stick, pepper corns, cloves, cumin seeds. Sauté well, and add onions.
· Cook the onions till it is translucent and now add the grounded mixture. Slightly fry for 4-5 mins. Now add the potatoes and fry for 1-2 minutes. Add salt, give a good mix.
· Add water that is left after cleaning the mixer jar. Cover the lid and cook on medium to low flame, until the potatoes are cooked.
· Its time to add the cooked rice, lemon juice and salt. Give a good mix.
· Cook for 4-5 minutes.
· Finally garnish it with coriander leaves.
· Serve it hot with salads, raita, pickle or papad.
