MEXICAN GRILLED TOAST SANDWICH

Mexican grilled toast sandwich along with fresh fruits on my table. A healthy way to start the beautiful morning.

Ingredients:

For Filling – Avocado Guacamole

· Avocados – 1 (ripened)

· Garlic – 8-9 cloves (crushed)

· Onion – 1 medium (finely chopped)

· Cherry tomatoes – 8-10

· Black pepper – ½ tsp

· jalapeños – 5-6 slices OR Green chillies – 1-2 (finely chopped)

· Lemon juice – 1 tsp

· Coriander/Cilantro leaves – handful

· Olives

· Salt

For Toast Sandwich:

· Bread

· Butter

· Guacamole

Method:

For Filling – Avocado Guacamole

· Scoop out the avocado in a bowl.

· Take a mortar pestle and pound garlic, onion and coriander leaves till a paste is formed.

· Now mash the avocado with a fork and add the paste to it.

· Now add cherry tomatoes, black pepper, lemon juice, jalapeños and salt. Give it a good mix.

· Your Avocado Guacamole is ready to be served with toasted bread or tortilla chips or Mexican rice or any dish of your choice.

· Refrigerate it for an hour for best flavor. (optional)

· But here I have prepared Toast sandwich by filling the guacamole.

For Toast Sandwich:

· Apply butter on the bread slices, spread freshly prepared guacamole on one bread slice. Now place other buttered bread over it.

· You can either use a sandwich maker to grill these sandwiches or a grilled pan to make them.

· If you don’t have any of these, use a regular tawa to make these toast sandwiches.

· Serve it hot with ketchup and fresh fruits for breakfast.
