Masala Rice Recipe is a quick, easy, and flavorful spiced rice that can be prepared with leftover rice and Indian spices. You can also add any vegetables of your choice to make it healthier and filling. This makes for a healthy lunchbox recipe. Each any every household must be having their own way of preparing this rice. Sharing my version which tastes great with curd, raita, papad and pickle.
Ingredients:
For Rice
· Ghee/ Oil – 1 tbsp
· Mustard Seeds – 1 tsp
· Cumin seeds – 1 tsp
· Asafoetida/ Hing – ¼ tsp
· Curry Leaves – 1 Sprig
· Dried red chilies – 1-2 (broken)
· Ginger garlic paste – 1 tsp
· Green chilies – 1-2 (chopped or slit)
· Onion – 1 (finely chopped)
· Turmeric – ¼ tsp
· Red Chili powder – 1 tsp
· Coriander powder – 1 tsp
· Garam Masala – ½ tsp
· Salt
· Rice – 2 cups (leftover or fresh rice should be cooled completely)
· Lemon – ½
· Finely chopped coriander leaves
Method:
· Take a kadai with ghee and oil in it. Now add mustard seeds, cumin seeds. Let it splutter.
· Now add hing, curry leaves, dried red chilies, ginger garlic paste, green chilies. Roast everything until it is properly cooked.
· Now add onion and sauté it for 3-4 mins. Add turmeric powder, red chili powder, coriander powder and garam masala powder. Fry it for 2-3 mins.
· Now add rice and salt. Give a good mix.
· Add lemon juice for making the rice a little moist and flavourful.
· Cover and cook for 3-4 minutes.
· Finally garnish with finely chopped coriander leaves and serve hot with curd, pickle and salad.
**** Optionally you can add any vegetables of your choice.
