MANGALOREAN KORI (CHICKEN) SUKKA

Mangalorean Chicken Sukka or Kori Sukka is a dry Konkani chicken dish where morsels of chicken are cooked over a low flame with grated coconut and spices. Fresh grated coconut adds a unique flavor to this preparation.

Ingredients: For dry masala · Byadagi Chilies -10 no · Guntur chilies - 4 no · Mustard seeds 1/4 tsp · Fenugreek seeds - 10 no · Cumin seeds – 1.5 tbsp · Coriander seeds – 2 tbsp · Pepper corns – ¼ tbsp · Cinnamon - 2 inches · Fennel seeds (saunf) – 1 tsp · Star anise – 1

Black cardamom – 1 · Clove – 4-5 · Tamarind - small ball For coconut masala · Onion – 1 big sized (sliced) · Curry leaves - few · Grated coconut – 1 small cup · Ginger – 1 inch · Garlic – 8-10 · Poppy seeds – ¼ tsp · Turmeric – ¼ tsp For cooking · Coconut oil – 2 tbsp · Ghee – 1 tbsp · Onion – 2 big sized (sliced) · Few Curry leaves · Chicken -1kg · Salt · coriander leaves Method: · Take a pan add little coconut oil and fry the dry chilies for some time till it is crisp. · Now add mustard seeds, fenugreek seeds, cumin seeds, coriander seeds, pepper corns, cinnamon, fennel seeds (saunf) ,star anise, clove. Fry till it is aromatic. · Once cooled grind all the above spices along with dry chilies and tamarind. Your dry masala is ready · Take a thick bottomed vessel add ghee and oil. Add sliced onions and curry leaves. Fry till the onions turn transparent. · Now add the washed and cleaned chicken and turmeric powder. Cover it with a lid for some time. Now add Salt and 2 tbsp masala that we had grounded. Mix it well and cover the lid till the chicken cooks nicely. · Take a pan fry Onions, Curry leaves, ginger, garlic nicely on medium flame. Now add poppy seeds and grated coconut. Add little turmeric powder and fry till the coconut is slightly roasted and aromatic. Let it cool. · Now add extra masala to the chicken and cover it again with a lid. · Now coarsely grind the coconut and other spices. Your coconut masala is ready. · Add this to the chicken, remember not to add too much of water. Give it a good mix, check for the salt and garnish it with coriander leaves. Turn off the flame. · Mangalorean style chicken sukka is ready to be served with rice or roti of your choice.


Accompanied with Jowar Rice Roti. These rotis are also called as akki jolada rotti in Karnataka.
