Kokum juice is a summer coolant and is popular in Konkan regions. Beat the heat this summer with this refreshing and rejuvenating summer drink. There is nothing so refreshing than a freshly prepared homemade kokum juice, that is power packed with all the health benefits. Was lucky enough to find the fresh fruits.
Ingredients:
· Fresh Kokum fruit (Garcinia indica) – 250 gms
· Sugar – 400-500 gms
Method:
· Wash the fresh kokum and let it dry. Now cut it into half.
· Remove the seeds with soft pulp and keep it in other bowl. In the other bowl add the outer covering.
· Add sugar to the outer covering of the kokum fruit and give a good mix.
· Keep this under direct sunlight for 7-8 days, cover the bowl with a muslin cloth.
· Sugar will get dissolved naturally.
· You can store this concentrated kokum syrup in a glass container.
· While enjoying this refreshing drink you can add salt, black salt and roasted cumin powder for additional flavours.
*** You can also add sugar to the seeds and keep that in the sunlight for 1-2 days. But consume that immediately, don’t store it.
