Kara sev is a popular deep-fried snack prepared especially during festival seasons or Diwali snacks. These are crunchy, spicy fried strings made with gram flour and Indian spices. A lovely snack which goes well with Tea.
Ingredients:
· Chickpea flour/ Gram flour/ Besan – 2 cups
· Hot oil – 2 tbsp
· Carom seeds – 1 tsp
· Chili Powder – 2.5 – 3 tbsp approx.
· Hing – ¼ tsp
· Chat masala – ½ tsp
· Salt as required
· Water as required
· Oil for frying
*** You may increase the quantity of chili powder as per your requirement.
Method:
· Take a small tempering pan dry roast the carom seeds till it turns aromatic and crisp. Once cooled down crush it in a mortar and pestle.
· Take a large mixing bowl sieve gram flour add crushed carom seeds, chili powder, hing, chat masala, salt and hot oil.
· Don’t add water, mix the flour using the fingers, see to it that the hot oil is mixed in nicely.
· Add water to make a smooth dough little butter.
· Now take the chakli press and replace the plate to make thick sev.
· Grease the press with oil and fill the press with dough and press in hot oil in large circles. Do not make too many layers.
· Fry in medium flame on both sides till the oil turns plain. Drain over paper towels. Repeat to finish.
· Once done roughly break to get small pieces.
· Store in an air tight container.
