Kashaya powder / kashaya is a traditional Ayurvedic health drink made from few spices which has immense health benefits and typically served as a healing drink especially for those who are suffering from a common cold or sore throat. It provides the necessary warmth and immunity to fight against the viruses, in addition to the fact that it can also be served as a beverage drink.
This mildly sweet, mildly spicy drink is very popular in Malnad and coastal regions of Karnataka and is often replaced with tea or coffee. It is a common drink at my native.
Ingredients:
For Kashaya Powder:
· Coriander seeds – 1 cup
· Cumin seeds – ½ cup
· Fennel seeds – 2 tsp
· Black pepper – 4 tsp
· Cardamom – 10-12 pods
· Clove – 15-20
· Turmeric powder – 1 tsp
· Ginger powder – 1 tsp
For preparing Kashaya:
· Water
· Jaggery/ sugar
· Milk
Method:
For Kashaya Powder:
· Take a pan, add coriander seeds, cumin seeds, fennel seeds, black pepper, cardamom pods, cloves. Dry roast on low flame.
· Dry roast until the spices turns aromatic.
· Let it cool completely, now transfer to a blender. Add turmeric powder and ginger powder.
· Blend to fine powder without adding any water.
Kashaya powder is ready, store in an airtight container.
For preparing Kashaya:
· Take a saucepan with 2½ - 3 cups of water and add 3 tsp of prepared kashaya powder.
· Add 2 tbsp jaggery or you can alternatively add sugar.
· Stir well and boil for 5 minutes till the flavours are absorbed well.
· Turn off the flame and add ¼- ½ cup milk. Mix well.
· Enjoy kashaya to boost your immunity.
