KANTOLA TAWA FRY/ PHAGILA PHODI

Kantola has many names like Spine gourd, Teasel Gourd, phagila, Mada hagala, locally this is called “Kaadu peere” in Mangalore. This monsoon vegetable is very popular, and is seen in the coastal region and some Eastern parts of states. This resembles a bitter gourd in structure, but not in taste. It is a crunchy mild flavored vegetable. And this tawa fry is just so yummm it vanishes in a few minutes.

Ingredients:

· Kantola – 300-350 gms

· Red Chili powder – 1.5 tsp

· Turmeric powder – ¼ tsp

· Amchur powder – ¼ tsp

· Hing

· Salt

· Rice flour – 1 tbsp

· Oil


Method:

· Wash the kantola very nicely, let the water drain oit.

· Cut each kantola into medium thick round slices and place them in a bowl.

· Add red chilli powder, turmeric powder, amchur powder, salt, hing and rice flour. Mix it nicely using your fingers. Keep it aside for 10-12 mins.

· Heat a frying pan and spread oil on it.

· Now arrange the coated kantola slices on the frying pan.

· Spread oil from the sides of the pan. Sprinkle little water, cover and cook on medium low flame.

· After few minutes, open the lid and flip to the other side, spread oil once again and fry for few more minutes.

· Enjoy this with any curry of your choice as an accompaniment.
