KAKDICHA KORDA

10 min Super healthy! Vegan & quick Maharashtrian delicacy. Most people only use cucumber for salads. But in Maharashtra, a very famous recipe called Kakdicha Korda is made by using cucumber. Mostly, cucumber is used to make delicious salads and as one of the condiments used in the preparation of sandwiches and burgers. At times we use it to make roti in Karnataka. This delicacy of Maharashtra called Kakdicha Korda is entirely made of cucumber. This recipe involves cooking cucumber in the sabzi style and making a delicious dish out of it. Have served this Korda with bhakri/ roti made using multi grain flour 🤎💛, onion slices tossed in salt, lemon juice and red chili powder and roasted green chili 💚. You can make it a little dry, I have kept it little runny.

Ingredients:

·        Cucumber (medium sized) – 1-2 grated

·        Oil – 1 tbsp

·        Mustard seeds – ¾ tsp

·        Cumin seeds – ½ tsp

·        Asafetida (hing) - ¼ tsp

·        Curry leaves – 1 strand

·        Green chilli - 1-2 (crushed)

·        Garlic – 4-5 (crushed)

·        Turmeric powder – ¼ tsp

·        Red chilli powder – 1 tsp

·        Coriander powder – ¾ tsp

·        Salt

·        Besan (bengal gram flour) – ½ cup

·        Water

·        Coriander Leaves

 

Method:

·        Wash the cucumber and chop off both ends of the cucumber and then rub the cut ends against the cucumber in a circular motion. This action can help release some of the frothy substance and bitterness from the cucumber).

·        Once this is done peel it and grate the cucumber. Lightly squeeze to remove the excess water from the cucumber.

·        Now take a pan, add oil, mustard seeds, cumin seeds, hing and curry leaves.

·        Now add the crushed green chilies and garlic, sauté it for a minute.

·        Now add in the grated cucumber and sauté for a minute.

·        Add in turmeric powder, coriander powder, red chili powder and salt.

·        Take a bowl add the besan, a pinch of turmeric powder and water. Mix it well so that no lumps are formed.

·        Now pour this mixture in the pan, mix it well and cover it with a lid.

·        Keep the flame on low and cook for 4-5 minutes till the besan is cooked properly.

·        Now garnish this with chopped coriander leaves and serve it hot.

·        It goes well with any bhakri,, chapati, phulka or rice.
