Halasina hannina mulka/ sutav ( Jackfruit Fritters), very authentic traditional cuisine which I used to enjoy during my stay at my native Karwar. This is made from Jackfruit which is in season during summers. Luckily jackfruits are easily available in Mumbai during summers and early monsoons, so tried this.
Ingredients: · Ripe Jackfruit – 1 cup (deseeded and cut) · Jaggery – ½ cup (as per the jackfruits sweetness) · Rice – 1 cup · Freshly grated coconut – ¼ cup · Rice flour – 1-3 tbsp · Cardamom – 3-4 · Black sesame seeds – 2 tsp (optional) · Salt – ¼ tsp · Oil for frying
Method: · Firstly, wash and soak the rice for 2-3 hours. After that drain it and keep it aside. · Now in a mixer jar add the deseeded jackfruit along with the jaggery. Grind it without adding any water. · Now add the soaked and drained rice along with freshly grated coconut and cardamom pods. Grind it to a fine paste. · Now pour this in a bowl, check out for the consistency. If it is thin add rice flour till the consistency of the batter is thick. (If it is very think, the mulka will soak too much of oil) · Now add black sesame seeds, which is completely optional and salt. Give a good mix. · Heat oil and when it is moderately hot start frying the fritters. Drop little balls using your fingers. · Remove it from the oil when it turns golden brown in colour. · Enjoy this authentic recipe hot or cold.
