Seasonal Indian dessert Gajar Halwa, an epitome of finest Indian sweets, is delicious and mouthwatering . I just love to have it both warm or cold. Served with Kesariya Rabdi.
Ingredients:
· Carrot (grated)-1kg
· Sugar-200 gm
· Milk - 300 ml
· Chopped cashew nut – 1 tbsp
· Chopped almond – 1 tbsp
· Chopped Pista – 1 tbsp
· Cardamom powder – ½ tsp
· Khoya – 125 gm
· Ghee -2 to 3 tbsp
Method:
· Take a big pan add grated carrots and milk, mix it well and lower the flame.
· Keep it covered with a lid, this will help the carrots to cook faster.
· Let the milk evaporate and then add sugar, give a good mix. Stir at regular intervals, so that the bottom doesn’t get burnt.
· Once the sugar has completely dissolved add the nuts, give a good mix.
· Once the halwa is almost done, add khoya, ghee and cardamom powder.
· Give a good mix, your gajar halwa is ready to be served hot or cold.
· Tastes yum with rabdi or Vanilla ice cream.
