Seasonal Indian dessert Gajar🥕 Halwa, an epitome of finest Indian sweets, is delicious and mouthwatering . I just love to have it both warm or cold. Have given a south Indian touch by using grated coconut 🥥 and dry fruits to cook it instead of Khoya.

Ingredients:
· Carrot (grated) - 1kg
· Sugar - 250gm
· Milk - 500 ml
· Chopped cashew nut – 1 tbsp
· Chopped almond – 1 tbsp
· Chopped Pista – 1 tbsp
· Grated coconut – 3/4 cup
· Ghee -2 to 3 tbsp
· Cardamom powder – ½ tsp

Method: · Take a big pan add grated carrots and milk, mix it well and lower the flame. · Keep it covered with a lid, this will help the carrots to cook faster. · Let the milk evaporate and then add sugar, give a good mix. Stir at regular intervals, so that the bottom doesn’t get burnt. · Once the sugar starts to dissolve add the nuts and freshly grated coconut, give a good mix. · Once the halwa is almost done, add ghee and cardamom powder. · Give a good mix, your gajar halwa is ready to be served hot or cold. · Tastes yum with rabdi or Vanilla ice cream.
