EGGLESS COFFEE TRES LECHES CAKE

Baked a classic Latin American dessert Coffee Tres leches cake for my Hubby's birthday.

While baking this cake my house was full of aroma, had the feeling as if I am at Starbucks

This Tres leches cake starts with a light-and-airy sponge cake that is coffee flavored; the cake is then soaked in a combination of different types of milk and coffee and topped off with fluffy coffee or cocoa cream

Ingredients:

For the cake:

· All-purpose flour (maida) – 1 ½ cups

· Baking powder – 1 tsp

· Curd – 1 cup

· Baking soda – ½ tsp

· Castor sugar – ¾ cup

· Vegetable 0il – ½ cup ¼ tsp

· Coffee powder – 2 tsp

For Soaking (Coffee Milk):

· Condensed milk – ½ cup

· Fresh cream – ½ cup

· Milk – 1 ½ cup

· Coffee powder – 1 tbsp

For topping:

· Whipping cream

· Cocoa powder

· Chocolate sprinklers (optional)


Method:

· Take curd in a mixing bowl and add baking soda. Give it a good mix and let it rest for 5 minutes. It will turn frothy.

· Take a mixing bowl add sugar and oil, give it a good mix with a balloon whisk. Try to incorporate more air in it.

· Now add the frothy curd mixture, coffee powder and give a good mix.

· Sift in maida along with baking powder.

· Now fold in all the ingredients slowly, but do not overmix it. Mix it until the batter is of a smooth consistency.

· At this stage you may add food colour, but it’s completely optional.

· Now pre heat the oven and pour the above batter in 8*9-inch greased baking tray, lined with a parchment paper.

· Bake the cake at 180 degrees Celsius for 25-30 minutes or until the cake is baked properly. Prick a toothpick to check. It should come out clean.

· Keep the coffee milk ready by mixing the condensed milk, fresh cream, milk and coffee powder to it.

· Once the cake is still warm prick it with a fork all over the cake and pour the coffee milk. The cake will absorb the coffee milk and make the cake very soft. Now refrigerate the cake for 30 minutes.

· Now you can top the cake with whipped cream, again refrigerate again for 30 minutes. Allow the cream to set well.

· Now garnish your cake by dusting cocoa powder on it or use sprinklers of your choice.

· Serve the cake chilled with little coffee milk in the Dessert plate.
