EGG BURJI/ BHAJI

Call it Boiled Egg Bhaji or Bhurji, don't know the proper name of this recipe.

I have learnt it from my mother, eating since childhood. It so happened I asked my mother where had you learnt it from, came to that she had learnt it from my Dad when she was newly married. Looks like he used to prepare it during their bachelor life. This goes well with chapati, bread or Pav.

Ingredients:

· Boiled Eggs – 7-8 (cut into small cubes)

· Oil – 1 tbsp

· Green chillies – 2-3 (finely chopped)

· Onions – 2 large (finely chopped)

· Turmeric powder- ¼ tsp

· Red chilli powder – 1 tsp

· Salt

· Pav bhaji masala – ¾ tsp

· Coriander leaves (finely chopped)


Method:

· Wash the eggs and boil it. Once cooled remove the shells and cut it into small cubes.

· Now take a Kadai, add oil in it. Add finely chopped green chillies. Saute for 1 min.

· Add onions and cook until onions are translucent. Add little coriander leaves and sauté it.

· Now add turmeric powder, red chilli powder, salt and pav bhaji masala, mix well.

· Add the boiled eggs cut into small cubes. Give a good mix.

· Garnish with freshly chopped coriander leaves and mix well once again.

· Serve hot with toasted bread slices, pav or paratha of your choice.
