EGG BURJI

Egg bhurji, also known as Anda Bhurji, is a scrambled eggs dish which is a popular Indian street food. Packed with the right amount of flavor and spice, these delicious Indian scrambled eggs are perfect for any meal of the day!

Ingredients:

· Oil – 1 tbsp

· Butter – 1 tbsp

· Jeera – 1 tsp

· Onions – 2 large (finely chopped)

· Tomatoes – 2 medium (finely chopped)

· Green chillies – 3-4 (finely chopped)

· Ginger – 1 inch (finely chopped)

· Salt

· Red chilli powder – 1 tsp

· Turmeric powder- ¼ tsp

· Pav bhaji masala – 1 ½ - 2tsp

· Coriander leaves - handful

· Eggs – 4-5


Method:

· Take a wok or kadai and set it on medium high heat, add oil and butter, add cumin seeds.

· Sauté for a minute, add onions and cook until onions are translucent.

· Now add the green chilies, ginger and chopped tomatoes, sauté for 3-4 minutes.

· Add salt, red chilli powder turmeric powder and pav bhaji masala, mix well and cook until tomatoes are lightly mushy.

· Now break the eggs in a bowl and whisk well with little salt and pour it in the wok.

· Cook while stirring continuously and keep the flame to medium heat, you can keep it dry or a little moist. The choice is completely yours.

· Garnish with freshly chopped coriander leaves and mix well.

· Serve hot with toasted bread slices, pav or paratha of your choice.
