Cream of Broccoli & Almond Soup is a simple vegetarian soup that’s thick, creamy, and made in Instant Pot!
This filling soup makes a healthy hearty meal. Served with Garlic cheese breadsticks.
Ingredients:
· Olive oil - 1 tbsp
· Onion - 1 medium size (chopped)
· Garlic cloves - 3-4 nos.
· Potato - 1 diced
· Water – 2.5 cups
· Salt - 1 tsp
· Broccoli - 250 gm (florets)
· Butter - 1 tbsp
· Refined flour - 1 tbsp
· Milk – 1 cup
· Black pepper powder - 1 tsp
· Almonds – 10-12
Method:
· In a deep pan add oil, onion, garlic, cook till, the onion is translucent.
· Now add the potatoes and water. Let it cook for 5 minutes on medium flame.
· Now add salt and broccoli, give it a stir and add water if required. Close the lid and let it cook for 4-5 minutes.
· Check if the vegetables are cooked, switch off the flame. Let it cool for 10-15 minutes.
· Soak few almonds in hot water for half an hour & peel the skin after sometime
· Now using a mixer jar or blender make puree of the vegetables along with almonds.
· Now in another pan add butter and add refined flour to it. Saute it well on low flame, now slowly add milk, keep stirring continuously ensuring there are no lumps.
· Add the pureed broccoli mixture and mix well, add black pepper powder, salt and cook on medium heat & bring to a simmer.
· Cream of Broccoli & Almond soup is ready to be served, serve hot and garnish with fresh cream.
