COCONUT PEDAS (NARALI PURNIMA SPECIAL)

Coconut Peda is a delicately flavored coconut sweet made with desiccated coconut, condensed milk, milk powder, cardamom and saffron, A perfect way to satisfy your sweet cravings and a quick one to be made for festivals!!


Ingredients:

· Desiccated coconut -1 cup

· Ghee -1-2 tbsp

· Milk powder – ¼ cup

· Condensed Milk - ½ cup

· Rose water - 1 tsp

· Cardamom powder -1 tsp

For Garnish

· Pistachios chopped

· Dried Rose petals

· Kesar strands soaked in milk


Method:

· Take a thick bottom non-stick pan on low flame, add the desiccated coconut.

· Dry roast it for 2 minutes on low flame constantly stirring so that the colour of the coconut does not change. Once it tums aromatic turn off the flame and keep it aside in another bowl.

· Now in the same pan on low flame, add 2 tbsp of ghee and let it melt. Now add condensed milk and cook for a minute

· Next add milk powder and roasted desiccated coconut, cardamom powder and rose water, mix everything well.

· Stir for 1-2 min and check the consistency of the mixture. If required add more of Condensed milk. Remember do not overcook it, otherwise peda will turn hard and chewy.

· Turn off the flame immediately and transfer the mixture on to the plate.

· Keep aside for 3 to 4 minutes, let it slightly cool.

· Grease your palms with ghee and take a lemon sized ball portion and roll it round and flatten it from top.

· Have used butter knife to make the designs on the pedas.

· Garnish with chopped pistachios, dried rose petals and soaked kesar strands.
