CHIROTI

Chiroti also known as Chirote is a delicacy mostly served in Karnataka and Maharashtra. Sweet loved by my family, it's chiroti to celebrate Diwali. This is my mom's recipe.


Ingredients:

For chiroti:

· All-purpose flour (Maida) – 6 cups

· Fine Rava (semolina) – 2 cups

· Thick Curd - ¾ cup

· Ghee – 1 cup

· Salt - ¼ spoon

· Baking soda – ¼ spoon

· Water

· Melted Ghee for rolling

· Oil for frying


For Sugar syrup:

· Sugar – 6 cups

· Water – 2 cups

· Lemon juice – ¼ spoon

· Cardamom powder – ¼ spoon

· Saffron (optional)


Method:

· Take a large mixing bowl soak Rava in curd for at least 30 mins.

· Now add all-purpose flour, hot ghee, baking soda and salt. Knead a semi hard dough with water if required.

· Make small balls out of the dough and keep it aside.

· Roll all the dough balls like a chapati and keep aside. Now, take one and spread the warm ghee and dust little maida on it. Place another one on top of it and apply ghee and sprinkle maida. You can stack 2-3 chapatis, but in have stacked only 2.

· Now roll it like a log and cut it into equal parts. Now take one part you can roll it elongated or in a circular shape.

· Start making the sugar syrup till it gets two threads consistency. You may add cardamom powder and saffron, completely optional.

· Heat oil in a kadhai over medium flame and fry them in batches till golden brown.

· Now drop these chiroti’s in sugar syrup, let it be in syrup for 3-4 mins.

· Later put it in a plate, excess sugar syrup will drain out.

· Once completely cooled store it in an air tight container.


*** Cups in my recipe refers to measuring glass or Vati you have at home weighing approx. 100 gms.
